curriculum framework

a six-week foundational inquiry into botanical chemistry, traditional foodways, and piano & acoustic craft.
capacity: strictly capped at four enrolled desks.
mixed-age: elementary through early middle school.

week 1: the seed, the oat flight & the morning sanctuary

  • The Sanctuary Rhythm: Morning arrival, observing the first feeding convergence at the sanctuary garden tree (scrub jays, towhees, and local finches).

  • Tactile Inquiry: Deconstructing the living anatomy of seeds and grains.

  • The Flight of Oats: Comparative preparation and texture study of whole groats, steel-cut oats, and rolled oats. Students establish a tactile oatmeal bar examining natural unrefined sweeteners and dried fruit.

  • The Press & Stamp: Initializing the handmade laboratory journal using raw ink pads and tactile rubber stamps to record daily observations.

week 2: the tuber flight & the architecture of starch

  • The Sanctuary Rhythm: Tracking root systems, soil moisture, and subterranean biological activity in the lower garden.

  • The Flight of Potatoes: Investigating a single potato harvest through successive chemical states:

    1. The foundation: A classic moist-dry aloo ki sabzi with peas, whole cumin, and onions.

    2. The flatbread: Transforming the spiced tuber into the filling for rolled aloo paratha.

    3. The pastry encasement: The geometry of crisp, handmade folded samosas.

    4. The emulsion: Simmering the base with cream into a restorative potato soup.

  • Hearth Hardware: Introduction to high-heat cast-iron tawa work and the acoustic mechanics of the Hawkins pressure cooker.

week 3: the lipid flight & the chemistry of heat

  • The Sanctuary Rhythm: Midday solar reading; studying how plant lipids protect leaves from moisture loss in foothill climates.

  • The Flight of Fats: Comparative sensory, thermal, and chemical analysis of unhomogenized lipids:

    • Hand-clarified golden ghee.

    • Cold-pressed mustard oil (studying volatile sulfur compounds and smoke thresholds).

    • Churned sweet cream butter.

    • Virgin coconut oil.

  • Tactile Foodway: Tempering (tadka / chhonk)—listening to the acoustic crackle of mustard seeds in hot fat and observing the bloom of fat-soluble aromatic oils.

week 4: the tomato flight, acid chemistry & everyday media analysis

  • The Sanctuary Rhythm: Observing insect pollinators and late-season nightshades in the sanctuary beds.

  • The Flight of Tomatoes: Examining the concentration of acid, natural sugars, and umami:

    • Raw tomato vs. organic whole-peeled canned tomatoes vs. slow-reduced double-concentrated paste.

    • Cooking an unhurried, scratch pasta sauce from low-cost pantry staples, demonstrating that elite kitchen craft rests on timing and thermal reduction rather than expensive luxury imports.

  • Critical Literacy Lab: Reading the Trader Joe’s Fearless Flyer alongside classical seed catalogs as primary descriptive food copy—deconstructing persuasive diction, commercial marketing frames, and supply chain rhetoric.

week 5: the sugar flight & living botanical sweetness

  • The Sanctuary Rhythm: Afternoon wind patterns; mapping nectar sources and the late-summer foraging flights of local foothill bees.

  • The Flight of Sugars: Exploring the spectrum of sweetness from raw cane to industrial crystalline sucrose:

    • Comparative tasting of raw cane jaggery (gur), dark molasses, unrefined brown sugar, and white refined sugar.

    • Brewing unhurried spiced chai in heavy brass using whole cracked spices and mineral-dense jaggery, observing how unrefined molasses alters milk protein stability.

  • Anatomical Dissection: Direct magnifying examination of owl pellets to reconstruct skeletal anatomy and map predator-prey dynamics within the foothill raptor territory.

week 6: the lentil flight & the final hearth feast

  • The Sanctuary Rhythm: Full sanctuary immersion, pre-sunset animal feeding convergence, and acoustic listening at the upright Cannery Row piano.

  • The Flight of Lentils: Mapping the colors, seed hulls, starch dynamics, and cooking rates across red masoor, split yellow moong, and whole black urad.

  • The Final Table: Preparing an unhurried communal dal and fragrant basmati rice, served traditionally on heavy partitioned stainless-steel thali plates.

  • The Living Colophon: Sealing student field journals with stamped closing seals and final botanical pressed leaves.

pedagogical note on vessels & material dignity:

rock paper rivers academy conducts all culinary and scientific inquiry using verifiable, heirloom hardware hand brought from kerala. these vessels are of classical culinary lineages—including heavy brass urulis, South Indian cast-iron tawas, Hawkins pressure cookers, and partitioned stainless steel thali ware. we do not work with disposable or synthetic materials. dignity of craft includes the empty vessel.
